Ingredients

  • Straight run maize meal (Mugaiwa)

  • ‘Orsha Chimera’ Blend of meal of Sprouted Sorghum and Finger millet grain

Directions

  • Boil Water – Use the biggest black Kango pot- 12 litres
  • Use the biggest black Kango pot- 12 litres to cook thick porridge using Mugaiwa maize meal. To cook this porridge measure 6 cups of Mugaiwa and add 5 cups of cold water. Stir this mixture until smooth.
  • Add about 10 litres of boiling water to this mixture i.e. leaving a space of about 5cm from the top. Stir well and put on the gas/electric/fire stove
  • Let the mixture boil for about 30 minutes then reduce temperature and let it cook on low heat for another 30 minutes
  • Pour the hot mixture into 20litre bucket
  • Add about 8 litres of cold water to this mixture and i.e leave about 5cm from the top
  • Let the mixture cool down to room temperature.
  • Add two cups of Chimera and stir them into the mixture
  • Cover the bucket with a lid and let it stand on folded sack outside at the base of the bucket for warmth
  • On the 2nd or 3rd day the mixture should be ready to drink.
  • The mixture Mahewu can then be refrigerated and can be consumed for the next 5 days or so.

Notes

  • The cup being referred to in this recipe is a standard coffee mug/Kango cup which measures about 350mls
